Hi friends! Silly question alert, do you like to save money and live healthier? Of course you do, don’t we all! One way I have discovered to save money is to stop buying overpriced boxes of cereal and make my own. Not only does it keep those precious dollars in my wallet but it also keeps me in control of the ingredients. No weird chemicals that I can’t even pronounce, to me it’s a winner! I want to share my favorite granola recipe, and before you say my kid won’t eat granola, my kids were the same way with the store bought granolas and once they tried this recipe they stopped asking for store bought cereal of any kind. I mean who wouldn’t want their mom to say here have some chocolate for breakfast!?!
This lasts my family of 5 about a week, sometimes more sometimes less, just depends on how cereal hungry we are that particular week.
3 cups old fashioned oats
1 cup unsweetened shredded coconut
1/2 cup raw sunflower seeds
1/4 cup raw pumpkin seeds
1/4 cup chia seeds
1/4 cup hemp hearts
1/2 tsp sea salt
1/2 cup cacao powder
2/3 cup melted coconut oil
1/2 tsp vanilla
1/2 cup maple syrup
Preheat oven to 325*F and line a 10×16 baking sheet with parchment paper.
Stir together the dry ingredients. Melt the coconut oil in a pan and whisk the maple syrup and vanilla with the oil.
Combine the wet and dry mixtures and mix well until all combined. Spread evenly on the prepared baking sheet and bake for 30 minutes. Allow to cool completely and store in airtight containers up to 2 weeks.
This is how I melt my coconut oil because I don’t want to dirty up a big saucepan, it’s a 1 cup stainless steel measuring cup.
Remember to not stir it or touch it while it is cooling in the pan if you want to enjoy the big chunks of chocolatey goodness! I store it in three 1qt mason jars so it is easy for my kids to pour themselves.
