Overnight Oats

Hi Friends! This will be a short post today but I wanted to share one of my absolute favorite recipes/methods for breakfast! I guess the title of this post gave it away, so yes I am sharing my overnight oats recipe. I eat this just about every single morning, I crave it all day and can’t wait until I can eat it again in the morning! If you are lucky you can find gooseberries, those little, tart, yummy and yellow berries, oh how I love them so. They aren’t available ALL winter here and it is so sad, every week I go to the produce section and walk away defeated because they aren’t there. Last week I went to a grocery store outside of my usual shopping radius and they had them, my daughter was with me so I had to play it cool, but I did have a tear of joy in my eye. If you don’t like gooseberries, like my hubby or kids, you can substitute any berry: strawberry, blueberry, blackberry, even cherries work great…whatever makes you happy! As for me I am going to stick with gooseberries as long as I can find them.

Overnight Oats

1/2 cup old fashioned oats

1 Tbsp unsweetened shredded coconut

1/2 Tbsp chia seeds

1/2 cup almond or coconut or any milk of your choice

1/2 Tbsp blackstrap molasses

1/4 cup of halved gooseberries/blueberries/blackberries or whatever berry you choose

Mix in a mason jar or an airtight container and soak at least 4 hours before eating and it will store up to 4 days in the fridge. When you serve it, I usually top mine with hemp hearts or pecans. The options are endless! Enjoy!
