Slow Cooker or Instant Pot Chicken Cacciatore (whole30, gluten-free, paleo friendly)

Hi Friends and happy Monday! I adore slow cooker meals, they make dinner time so much less stressful and make me feel accomplished because I planned ahead for once! Instead of standing in my kitchen wondering what I am in the mood for right before my husband comes home, I can relax and know that dinner is done…awesome!

This is my version of Chicken Cacciatore, I just tried to replicate the flavors I enjoyed at our favorite local Italian eatery. I love the mix of tomatoes, bell peppers and onions, true comfort food that warms the soul. Perfect for any night of the week, although I am partial to this meal on Sundays simply because it is SO quick and easy to throw together before having to head out the door for church.

Slow Cooker/Instant Pot Chicken Cacciatore

1 med onion, chopped

1 med bell pepper, chopped

1 cup roughly chopped mushrooms

1 Tbsp basil

1 Tbsp oregano

3 cloves garlic, minced

1 tsp sea salt

5 boneless, skinless chicken thighs

28 oz. can diced tomatoes

1/2 Tbsp balsamic vinegar

4 cups of zucchini noodles

 

Dump everything, except for the zucchini noodles, in slow cooker or instant pot, give it a stir to make sure the spices are evenly incorporated. In the slow cooker, cook on low for 5-6 hours or high for 3-4 hours. In the Instant Pot on high pressure for 20 minutes, use either quick release or natural release whichever you prefer. 5 minutes before serving add in the zucchini noodles and stir, the residual heat will cook the zucchini noodles perfectly. Enjoy!
