Slow Cooker Sweet Potato Chili (Whole30, paleo)

Hi friends! This is a recipe I am sure your whole family will love and is also healthy! My two youngest are not fond of sweet potatoes while I could eat them every single meal every day, I love the nutritional value that they bring and most importantly the taste…mmmmm yummy! For some reason my middle boy has decided he does not like them and will grumble and complain every time they are served, except for when I serve this chili. He gobbles it up, including the sweet potatoes, and says “awesomesauce!” Feels like a major mom win, gotta take the little things right? I can’t be the only one! This recipe is super easy, which is a major plus in my book and really doesn’t require a lot of effort but the flavor is outstanding. If you like it a little more spicy add another tablespoon of chili powder and throw some red chili flakes in.

Sweet Potato Chili

1 lb. ground chicken

2 med sweet potatoes, chopped into 1/2″ chunks

1 med onion, chopped

1 med bell pepper, chopped

2 28 oz. cans tomato sauce

1 Tbsp chili powder

1 Tbsp cumin

1/2 Tbsp garlic powder

1/2-1 tsp sea salt

Brown ground chicken in pan, add it and the rest of ingredients to slow cooker and cook on high for 2-3 hours or low for 5-6 hours. Can also be cooked on the stovetop in a stockpot, bring to a boil and simmer for 1-2 hours. Enjoy!

Goes great with my gluten-free cornbread and a salad. Let me know what you think!
