What is a girl to do when there are very ripe bananas sitting on the counter? Make banana muffins of course! My family eats A LOT of bananas so we don’t usually have any perfectly ripe ones to make muffins or bread with. Sometimes I will buy ripe, ugly bananas just for this purpose…there are times when you just need banana muffins right?!? In the picture below is a half of a nutmeg, I just think they look so cool on the inside! I prefer freshly grated nutmeg, the smell is amazing!
This recipe uses whole grain spelt flour but you can use any whole grain or all-purpose flour and applesauce instead of sugar, trust me it is sweet enough and you won’t have to feel guilty for eating one or two in the morning or anytime of the day. Tip: they are perfect with a cup of tea in the afternoon!
2 cups whole grain Spelt flour or any whole grain or all-purpose flour
1 Tbsp baking powder
3/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg, freshly ground is best
2 ripe bananas
1/4 cup unsweetened applesauce
1/2 cup avocado oil, or whatever oil you normally use
1 tsp vanilla
1 cup milk of choice, I use almond
Preheat oven to 400*F.
In a medium bowl mix flour, baking powder, salt, cinnamon and nutmeg and set aside. In another bowl, mash up bananas and add the rest of the wet ingredients. Combine the wet and dry ingredients and stir until just combined. Batter will be lumpy and that’s OK because overmixing will make them tough.
Pour into paper lined muffin tin or use silicone liners like mine and bake for 16-18 minutes or until toothpick comes out clean. Enjoy!
The silicone liners I used are these, LOVE them! I didn’t spray them with anything and look how clean they come out…I soak them in warm dishwater for a few minutes and the crumbs wipe right out the first time. Also look at the happy colors!!!
I even bought the jumbo size cups to line my cup holders in my van so dirt and crumbs don’t collect in the bottom, makes it SO much easier to clean and made the inside of my van more colorful!
