Chopped Veggie Salad

Hi again! We have had a busy weekend celebrating and having a great time. Not only having a cookout on Memorial day but my (baby) daughter turned 10 on Saturday (seriously how did that happen so fast?!?) so we had a party for her too. We had a great time with friends and what we consider family, as we don’t live near any of our actual families. I am so thankful for the people who God has put in our lives here.

 

For her party she wanted grilled cheeseburgers, not going to get an argument from anyone about that. We had the usual burgers, chips, fruit salad made with blackberries, blueberries and strawberries, I always try to serve some healthy sides with any cookouts. That is where my chopped veggie salad comes in handy. Plenty of fresh yummy and healthy goodness that can be made ahead of time and doesn’t need to be kept warm or cold and won’t spoil quickly in the heat. Perfect picnic or cookout food and great to keep in your fridge for snacks, lunches or anytime. I sometimes eat this with some eggs in the mornings for breakfast, delicious!

 

Chopped Veggie Salad

Everything chopped to whatever size you prefer:

3 carrots

1 large seedless cucumber

1 cup broccoli

1 bell pepper

1 medium red onion

1 cup tomatoes

1 cup kale

Dressing:

1/4 cup avocado/olive oil

2 TBSP red wine vinegar

2 tsp dried oregano

1/2 tsp sea salt

Directions:

Whisk ingredients for dressing in a small bowl and set aside.

Toss chopped vegetables in a large bowl and add dressing. Toss together until well coated. Store in fridge until ready to eat. Enjoy!
