Hi! This Mexican style chicken recipe is going to make your taste buds throw a fiesta! This is my go-to dish when I need something delicious for dinner on a very busy day or a Sunday. You can just load it up in your slow cooker and forget about it until dinnertime. The flavors are amazing, with the cumin and chili powder you get the typical Mexican flavors but something happens that is magical in that slow cooker, the flavors just blend together in the sauce and the taste is mouthwatering and scrumptious. This makes a great summer meal because it doesn’t heat up your kitchen.

Healthy Chicken Fiesta
1 lb. boneless chicken
2 cups black or adzuki beans, cooked or canned
1 28oz can of diced tomatoes, fire-roasted preferred
1 28oz can tomato sauce
1 medium onion, chopped
1 bell pepper, chopped
2 cups riced cauliflower*
1 TBSP cumin
2 TBSP chili powder
2 tsp garlic powder
1 tsp sea salt
Combine all in your slow cooker and stir. Cook on low 7-8 hours or high 5-6 hours. Enjoy!
For the instant pot, just throw your ingredients in and cook on high pressure for 20 minutes and do whatever release your would like. I do NPR just because it gives the flavors more time to meld together but QR will work also.
*If you would like to substitute rice for the cauliflower just add 2 cups of cooked rice a few minutes before serving.
You can top this with anything you like: cheese, avocado, sour cream, green onions, chips, etc. I usually just serve it as is maybe with some cilantro and dip a few chips in. Great for any night of the week, this is a kid-friendy meal all 3 of mine devour it and ask for more!
